Vinification: after 24 hours of cold maceration the mass was gently pressed. 10% of the must went to the new barrique (french oak), while the remaining 90% went to stainless steel containers. The fermentation began at a controlled temperature. After 3 months the wine was combined.
Maturation: on fine lees until January
Bottling: 0.75 l, natural cork
About wine: A clear wine the colour of straw with golden hues. The bouquet is lively, with an intertwining of flowers and fruits, especially white roses, acacias, vineyard peaches and citrus fruits, with slight fragrances of the minerals of the soil of Brda. A full, harmonious, and slightly salty taste in the mouth, but above all seductively youthful. Fruity- floral perceptions are joined by herbal notes, mostly mint, white feverfew, and lemon balm, which highlight its complexity. The aftertaste is intense, marked by freshness, fruitiness and minerality.
Pairing suggestions: Rebula Classic is a versatile aperitif wine, suitable for socializing with small bites based on cottage cheese or young cheeses, but especially with dishes of pure flavours such as fish carpaccio, sushi, tempura vegetables, sole à la meunière, boiled beef, chicken and other white grilled meat or meat in a light tarragon sauce. It also goes extremely well with dishes with spring wild plants such as pokalca grapes, wild hops, and asparagus. The ideal serving temperature is 8-12°C.
